This special coffee comes from Java island in Indonesia. It is made from coffee beans that are eaten and then excreted by special types of civets. "Kopi" is the Indonesian name for coffee, "Luwak" refers to civets - animals from the marsupial group that feed on the fruit pulp of coffee cherries. They cannot digest coffee beans, which are thus naturally fermented by the enzymes of these animals, creating a characteristic dark, rich coffee taste. Cleaned and roasted beans represent the most expensive coffee in the world.
