Coffee retains its original full, slightly spicy, fruity aroma, despite having only 0.5% caffeine remaining after the decaffeination process.
Decaffeinated coffee is prepared using a special and lengthy water process (swiss-water-process). Coffee is soaked in clean water and green coffee extract, and caffeine then passes from coffee beans into water due to osmosis. By controlling temperature and time, they manage to extract 99.5% of caffeine, while coffee retains excellent aroma despite processing.
